Comfortable silence: that moment when nothing needs to be expressed in words because there is something more nuanced at play. It’s wild if you think about it: the ability to understand subtle, non-verbal cues that lead to an insight about what the other person is feeling or thinking. It’s like a hyper form of communication that language can’t articulate. It feels nice, this shared unspoken connection.

In the case of bread making, it’s the point at which developing the dough becomes second nature. In this silence, the other senses take over: sight, touch, smell, taste – all of which allow an instant interpretation what is needed, what naturally comes next.

I made this bread yesterday. It was one of those moments where I was alone in the kitchen, silently working, just doing my thing.
